Gluten Free Oat Bread

















What you need:


GF Flour Mixture:

· 1 ½ cup ONLY OATS oat flour

· ½ cup brown rice flour

· ½ cup potato starch flour

· ¼ sorghum flour

· ¼ cup tapioca flour


Dry Ingredients:

· 3 ½ tsp xanthum gum

· ½ cup dry milk powder

· 1 tsp salt

· ¼ cup ground flax

· 3 tbsp ONLY OATS oat bran

· 2 tbsp whole millet (optional)

· 1 ½ tsp yeast


Wet Ingredients:

· 3 eggs slightly beaten

· ¼ cup vegetable oil

· 1 tbsp honey

· 1 tbsp molasses

· 1 tsp vinegar

· 1 ¾ cup warm water


How to make it:

1. Mix flours together to create flour mix

2. Mix wet ingredients and place in 1 ½ lb bread maker pan. Wet ingredients should be slightly warm.

3. Add flour mixture and other dry ingredients, adding yeast last

4. Set bread maker machine to 2 hr setting with dark crust (or similar setting on your machine)

Dough will be like a thick cake batter and should have a rounded top while mixing. Add 2 or 3 tbsp of water if the batter is not mixing well or cut back on next loaf is batter is too thin.

5. Scrape sides of pan after 5 – 10 minutes of mixing

Inside temp of bread should be 200 degrees F when it is done baking

6. Let cool on baking rack before slicing


Time Saver Tip – Triple or quadruple the flour mix and measure amount for one recipe into small airtight bags or containers. Add salt, xanthan gum and milk powder to each bag or container for quick mix. Store in fridge or freezer


Cranberry Cinnamon Bread – Add 1/3 cup chopped dried cranberries, 1 tsp cinnamon, ¼ tsp ground cloves, 1/3 cup sliced almonds


Cheese Bread – Add 1/3 cup sharp grated cheese of your choice


Herb Bread – Add 1 to 2 tsp of Italian herbs or spice of your choice and 1/3 cup sun dried tomato (not oil pack) cut into small pieces
